Remove milk, yogurt, & eggs from fridge to come to room temp (about 45 min)
Preheat oven to 400°.
Add 3/4 tsp vinegar to 1/4 cup milk. Stir & let sit for 5 min to create buttermilk.
1/4 cup milk + 3/4 tsp vinegar
Combine avocado oil, melted butter, sugar, eggs, vanilla, plain greek yogurt, maple syrup & buttermilk.
1/4 cup avocado oil, 1/4 cup melted butter, 3/4 cup sugar, 2 eggs, 2 tsp vanilla, 1/2 cup plain greek yogurt, 1 Tbsp pure maple syrup, 1/4 cup milk + 3/4 tsp vinegar
Add flour, baking powder, & salt.
2 cups flour, 1 Tbsp baking powder, 1/2 tsp salt
Mix brown sugar and cinnamon together for cinnamon/ sugar layer.
3 Tbsp brown sugar, 2 tsp cinnamon
Add muffin liners to muffin tin. Use every other muffin spot. (This allows more air to get around the muffin during baking to create a fluffy muffin)
Fill muffin tin half way with batter. (Tip: Use a cookie scoop for mess-free easy measuring) Spoon about 1 tsp of the cinnamon/sugar mixture into each muffin tin on top of batter.
Add another scoop of batter to each tin.
Use fork to twist and swirl cinnamon/sugar layer
Bake for 15-17 min
