    • 2 cups finely crushed pretzels
    • 1 cup melted butter
    • 2 Tbsp brown sugar

    • 1 .5 Tbsp lemon juice

    • 2 Tbsp cornstarch

Step-by-Step Instructions:

  1. Preheat oven to 350°
  2. Mix crushed pretzels, melted butter, & brown sugar. Mixture should be like wet sand.
  3. Spoon about 1/2 Tbsp into mini cheesecake pans & press into individual cheesecake pans or lined muffin tins.
  4. Bake for 8-10 min.
  5. Make strawberry layer. Whisk water and cornstarch in small bowl. Add all ingredients into small saucepan. Stir and bring to boil, then cook for 4-5 min, stirring periodically. It will cooks down. Remove from heat and let cool.
  6. Place mixing bowl and whisk in freezer for 5 min.
  7. Beat cream cheese and powdered sugar. With mixer on low, add in heavy whipping cream and vanilla. Increase speed and mix until soft peaks form.
  8. Layer pretzel layer in individual cups. Add cream cheese mixture to piping bag and layer on top of pretzel layer. Add Strawberry layer.
  9. Refrigerate for at least 2 hours, best overnight so strawberry layer sets.
