  • ½ cup butter (room temperature)
  • ¾ cup brown sugar

  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ¾ tsp salt
  • ½ tsp ground ginger
  • 1 tsp cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp nutmeg

Directions:

  1. Prep Ingredients: Remove butter and egg from the fridge an hour before baking to bring them to room temperature.
  2. Cream Butter and Sugar: In a large bowl, use an electric mixer to cream butter and brown sugar until light and fluffy.
  3. Add Wet Ingredients: Mix in the molasses, egg, and vanilla extract until smooth.
  4. Mix Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, salt, and spices. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  5. Chill Dough: Chill the dough for at least 1 hour to make it easier to handle and scoop.
  6. Preheat and Scoop: Preheat oven to 350°F and line baking sheets with parchment paper. Use a medium cookie scoop to portion the dough onto the prepared baking sheets.
  7. Bake: Bake for 8–10 minutes, until the edges are set but the centers remain soft.
  8. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
