Soft and delicious maple pecan cookies—cozy flavors in every bite!

Ingredients
1/2 cup butter (room temp)
1/2 cup packed light brown sugar
1/4 cup pure maple syrup
1 egg (room temp)
1 egg yolk (room temp)
1 1/2 tsp vanilla extract
1/2 maple extract
1 3/4 cups all-purpose flour
1/2 tsp baking soda
3/4 tsp salt
3/4 cup chopped pecans

Directions:
Start by removing the butter and eggs from the fridge about 45 minutes before baking to let them come to room temperature.
Preheat your oven to 350°F and line baking sheets with parchment paper.
In a large mixing bowl, cream the butter, brown sugar, and maple syrup together until light and fluffy.
Add the egg, egg yolk, vanilla extract, and maple extract, and beat until smooth.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually mix the dry ingredients into the wet ingredients until just combined.
Gently fold in the chopped pecans, ensuring they are evenly distributed throughout the dough.
Scoop the dough onto the prepared baking sheets using a medium cookie scoop.
Bake the cookies for 8-10 minutes, or until the edges are set and the centers look slightly underbaked.
Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Ingredients:
1/4 cup butter (room temp)
1/2 cup creamy peanut butter
1/2 cup brown sugar
1/4 cup sugar
1 egg (room temp)
2 tsp vanilla
1 1/4 cup flour
1/4 tsp baking soda
1/4 tsp baking powder
3/4 tsp salt
Extra sugar for rolling (about 1/4 cup)

Ganache Ingredients:
1/2 cup heavy whipping cream
1/2 cup finely chopped chocolate

Directions:
Remove butter and egg from the fridge about 45 minutes before baking. Preheat the oven to 350°F and line baking sheets with parchment paper.
In a large bowl with electric mixer, cream the butter, peanut butter, brown sugar, and sugar together until light and fluffy.
Mix in the egg and vanilla extract until fully combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
Preheat the oven to 350°F and line baking sheets with parchment paper.
Use a medium cookie scoop to scoop the dough. Roll dough in granulated sugar and place onto prepared baking sheets. Use your thumb to create an indention in the dough.
Place dough in freezer for 30 min.
Bake for 10–12 minutes, or until the edges are set and the centers are slightly soft. Use the end of a spatula to recreate the indention in the cookies. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Ganache Directions:
Finely chop chocolate until it’s almost to a powder consistency. Put into medium-sized bowl.
Heat cream a to slight simmer (about 190°).
Pour over cream over chocolate in bowl. Gently stir until chocolate is melted.
Let cool till room temp.

Place ganache in piping bag and fill cookies

1 1/4 cups all-purpose flour
1/4 tsp baking soda

3/4 tsp salt
3/4 cup chocolate chips (divided)

Directions:
Preheat oven to 350°F and line an 8x8-inch pan with parchment paper.
In a large bowl, whisk melted butter, brown sugar, and granulated sugar until combined.
Add egg, egg yolk, and vanilla extract; whisk until smooth.
In a separate bowl, whisk flour, baking soda, baking powder, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
Fold in 1/2 cup chocolate chips.
Spread the batter evenly into the prepared pan. Sprinkle and lightly press the remaining 1/4 cup chocolate chips into the top of the batter.
Bake for 20–25 minutes, or until the edges are set and the center is slightly soft.
Let cool in the pan before slicing into squares.
